Papas Rellenas Colombianas (Colombian Stuffed Potatoes) Recipe

The traditional Colombian appetizer that can be served at any party and equally suitable for your kid’s lunch, these papas rellenas are enjoyed by everyone for a meal or afternoon snacks, as well.
  • Vegetable oil for frying
  • 5 medium potatoes, peeled, diced
  • ¼ tsp salt
Meat Filling
  • 1 tbsp olive oil
  • 1 cup chopped tomato
  • ⅓ cup chopped onion
  • ⅓ cup chopped scallions
  • 1 garlic clove, minced
  • ½ tsp ground cumin
  • ½ tsp sazon Goya with azafran
  • ¼ tsp salt
  • ¼ tsp ground pepper
  • ½ pound ground beef
  • 1 egg
  • ¼ cup all-purpose flour
  • Pinch salt
  • ½ tbsp sazon Goya with azafran
  • ¼ cup milk
  1. Boil the potatoes into hot water with a pinch of salt for 20 minutes.
  2. Drain it and mash them using a fork. Set aside for now.
  3. For the filling, heat 1 tbsp oil in a pan. Fry the onion, scallions, cumin, tomato, garlic, pepper, salt and azafran.
  4. Toss around for 5 minutes.
  5. Throw in the beef and toss around for 15 minutes. Take off the heat and let it cool.
  6. In a bowl, combine the batter ingredients and whisk to make smooth.
  7. Create 10 balls using the potatoes.
  8. Now take one ball and flatten it to form a round circle.
  9. Fill the middle with the beef filling and seal the edges of the potato circle and form a round ball.
  10. Repeat the process with the other 9 potato balls.
  11. Now into a skillet heat the rest of the oil.
  12. Dip each ball into the batter and golden fry the potato balls in batches.
