Brinjis Tkbili (ბრინჯის ტკბილი) is a Georgian rice pudding/cake-like confection popular after lunch or dinner as a dessert or served as a snack.
  • 300 g white rice
  • 120 g sugar
  • 120 g softened butter
  • 3 eggs
  • 1 tbs vanilla extract
  • 1 liter milk
  • Pinch of salt
  • confectioner's sugar for decoration
  1. Wash rice, and pour with the milk into a pot and bring to a boil.
  2. When finished, set aside to cool.
  3. Separate egg whites and yolk.
  4. Whip egg whites, slowly adding in butter, vanilla extract, and yolks.
  5. Combine with rice and mix together well.
  6. Place in a greased dish and bake at 170 C degrees for about 40 minutes.
  7. Sprinkle the finished dish with powdered sugar before serving.
